
Hey guys! I hope everyone had a happy halloween. While all of yall may have been busy trickin’ and treatin, I was busy making the final installment of October’s Fritters. Of course, I didn’t want to end the month without a dessert, especially on Halloween– they came out so delicious, almost like apple cider donuts! They reminded me more of beignet- like than fritters. Here is the recipe & a glaze I made also– notes on the recipe to follow! Enjoy!


Cinnamon Fritters
1 Tablespoon Cinnamon, Plus 1 tablespoon 1/2 teaspoon salt
1/4 cup Sugar, Plus 1 tablespoon 1/2 cup milk
1 1/2 cups GLUTEN FREE* all purpose flour 1/2 cup non fat milk, plus 1/4 cup**
1 Tablespoon baking powder* Vegetable Oil for frying
- Mix flour, baking powder, 1 table spoon cinnamon, 1/4 cup sugar, and salt. Set aside.
- In a separate bowl, mix together 1/2 cup milk + egg. Mix the wet mixture into the dry mixture. You want the mixture to be thick. **If the amount milk isn’t enough to combine all the ingredients together slowly, and I cannot stress the word slowly enough, add more milk. You absolutely do not want a loose mixture. Refrigerate for at least one hour.
- In a pot pour in a good amount of oil and wait for it to heat up a few minutes. While you are waiting, pull dough out of the fridge and grab a spoon. When the oil is ready spoon out amounts of dough. Make in batches in the oil, turning over to fry all sides. It should be golden brown.
- Mix together the rest of cinnamon + sugar and toss the finished fritters in that mixture.

Cream Cheese Frosting Glaze
1/2 cup cream cheese (4oz-I used lowfat cream cheese), room temp
4 Tablespoons of unsalted butter, room temp
1 teaspoon vanilla extract– for those who can’t cook/bake with alcohol, trader joes makes an alcohol-free vanilla extract!
1 cup powdered sugar
- mix all the ingredients together. I added food coloring to make it festive for halloween.
- warm up the frosting t make a glaze
Thoughts & Notes on These Recipes
On the fritters/donut holes/beignets/whatever, I found these really scrumptious. It is very important they get refrigerated enough, mine were a little loose & not cool enough so it was imperative that I used a spoon to scoop., I stay away from apples because they upset my stomach, but if you added some cider or applesauce to the batter, it would add a yummy extra layer of flavor.
The Glaze- The glaze is basically a cream cheese frosting. The only difference between a frosting and a glaze here is that the warming of it, gave the frosting a more liquid consistency. Honestly tho, I think I prefer dipping them in the cool frosting, thats just my preference. I cannot cook or bake with alcohol because I keep a sober lifestyle. While for me, adding vanilla to a dessert may not “hurt” me in any way, I was once told “would you cook with lemon juice if you had an allergy towards lemons?” The answer is no, so therefore, I choose to align my lifestyle to AA standards and not use alcohol when I cook. Luckily, I found that trader joes sells an alcohol free vanilla extract, which makes things a hell of a lot more simple when it comes to baking!
